Breakfast: scrambled egg, sauteed crimini mushrooms, bacon, and grated carrot over green leaf lettuce, with blueberries
Lunch: two nori wraps with: avocado, lemon and cauliflower rice, carrot sticks
Dinner: leftover sweet potato dish, green leaf lettuce salad with balsamic vinegar, pumpkin seeds, sesame seeds, and sunflower seeds
Thoughts: I knew it would be difficult to eat a plate of protein and veggies for breakfast, and it is. I am more of a cereal or muffin girl at breakfast time. So the past two days I haven't really enjoyed my morning meal, but I definitely love the way I feel after eating it. I can focus on so many other things when I'm energized and satiated until lunch!
I made enough eggs for everyone this morning, but Ezra and I ate them all before Tyler even got out of bed. Hazel and Lincoln aren't big fans of eggs but both took bites. Lincoln likes when I make him "face plates" so I bought a few more plain colored circle plates for the kids today. His dinner face had salad hair, wheat noodle eyebrows and nose, blueberry eyes, and cubed chicken teeth. Ate the whole thing! Cheer!


Good for you. I seriously cannot imagine life without dairy and grains, in particular. I did notice a huge difference when we cut way back on sugar and added even more vegetables and fruits, and had stricter portion control. I almost never bake anymore without you to give half to.
ReplyDeleteHi Dagny! Sharing baked goods is the best! I eat Tyler's chocolate chip cookies within two days of him baking them. We try to give some to our next door neighbors, or my friend Tara who lives very close, but sometimes I get to them all first! Hence, this attempt at changing my habits. I remember watching you use an immersion blender for that pear soup. Do you still find that useful? The more I cook, the more I realize how awesome that was!
ReplyDeleteI can't imagine giving up grains permanently either. Dairy is fine: I haven't drank milk in years, and cheese and yogurt give me cramps and gas. Partly why I chose the whole 30 plan is that I was looking for a gentle detox (one that wouldn't make me so sick and tired that I couldn't take care of the kids) and this fit the bill. And now, when I add things back in slowly, I can see how they affect my body. I think my digestive system could be better, so I'm going to listen to it. Which means plugging my ears to my sugar-craving brain for a little while, I guess! lol
